Something popped up in my Youtube suggestions about making pancakes or omelettes from red lentils ....... I've always got some in so thought I'd give it a try

It's so simple

Just put some red lentils in a bowl with two times the amount of cold water ....... leave to soak for a couple of hours. Then add some salt & pepper and blend into a paste. I just used my little electric hand blender

then put a dollop in an oiled non stick frying pan and cook like you would an egg omelette, couple of minutes each side flicking over occasionally

I think was a success .... I made a couple and ate them. They tasted great ...... surprisingly they tasted like crispy egg omelettes ........ if you let them cool they can be used as wraps or like chappatis. Lentils are very healthy, lots of fat free protein and you could add spices, herbs, curry powder.

Think I'll have a few goes at this and see if I can perfect it ........ I like the idea of eating a lot more lentils and pulses for health and economy reasons

This sounds interesting!

I like omelettes, but let's just say that on occasion, eggs don't like me :oops: Maybe the lentil version might be a safer option! :D

I've had aother go at Lentil pancakes today ...... more successful than last year because in the interim I've got a new frying pan which is more non-stick than my old one

Made it the same as in the OP but added cumin, chilli and some seame oil, salt and pepper

For measurement I used a normal sized drinking glass ..... half glass of red lentils and then a full glass of water...... mixed them in a bowl with a hand held blender and used a ladel to pour the mix into the frying pan

Made two decent sized pancakes which was sufficient for a lunch ....... very tasty

The possibities with this are pretty endless ...... to the basic mix you can add any spices or herbs, cooked diced vegetables. mushrooms could be nice, anything really

Now that I have a proper non-stick frying pan I think I'll add this to my regular rota of lunches or teas

I don't see why not ...... sprinkle with sugar, lemon juice, put some jam on ....... migght give that a go !
